Kim's Wicked-Good Marinara Sauce

 2 1/2 tsp ground oregano
 2 tsp whole fennel seed, ground in a mortar or with your fingers
 2 tbsp olive oil
 4 -5 large garlic cloves, crushed
 1 15oz. can of Eden Organic crushed tomatoes
 1 6oz. can of Hunt's tomato paste
 4 tbsp good quality butter
 2 1/2 tsp salt
 1 tsp pepper
 12 oz. water

 In a large skillet, add the ground oregano and fennel seeds (crushed) and heat on med-high heat until you can smell their         aroma.  Add the olive oil.  After the olive oil heats, add the garlic and sauté for a few minutes.  Add the crushed tomatoes, tomato    paste, butter, salt, pepper and water and stir.  Once the sauce begins to bubble, turn the heat to low and serve over your favorite   cooked pasta.

 optional ingredients:
  -- pitted calamata olives
  -- crushed red pepper
  -- chopped spinach
  -- chopped, cooked bacon or ground sausage
